Ingredients:
1 avocado, sliced π₯
2 boiled eggs, sliced π₯
10 cherry tomatoes, halved π
Β½ cup sweet corn π½
ΒΌ cup feta cheese, cubed π§
ΒΌ red onion, thinly sliced π§
A handful of fresh parsley πΏ
A pinch of salt and black pepper π§
2 tablespoons olive oil
1 teaspoon lemon juice π
Instructions:
In a large bowl, arrange the avocado, eggs, cherry tomatoes, corn, feta cheese, and red onion.
Sprinkle with salt, black pepper, and fresh parsley.
Drizzle with olive oil and lemon juice.
