Ingredients
For the Cinnamon Cupcakes:
1 ½ cups (190g) all-purpose flour
1 ½ tsp baking powder
½ tsp salt
1 tsp cinnamon
½ cup (113g) unsalted butter, softened
¾ cup (150g) granulated sugar
2 large eggs
1 ½ tsp vanilla extract
½ cup (120ml) whole milk
For the Cinnamon Sugar Coating:
¼ cup (50g) granulated sugar
1 tsp cinnamon
2 tbsp melted butter
For the Cinnamon Buttercream Frosting:
1 cup (226g) unsalted butter, softened
3 cups (360g) powdered sugar
2 tsp cinnamon
2 tsp vanilla extract
¼ cup (60ml) heavy cream or milk
Pinch of salt
Instructions
Making the Cinnamon Cupcakes:
Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
In a bowl, whisk together flour, baking powder, salt, and cinnamon.
In another bowl, cream butter and sugar until light and fluffy.
Add eggs one at a time, mixing well. Stir in vanilla extract.
Alternate adding dry ingredients and milk, mixing until just combined.
Fill cupcake liners ⅔ full and bake for 18-20 minutes. Let cool slightly.
Adding the Cinnamon Sugar Coating:
Mix sugar and cinnamon in a small bowl.
Brush warm cupcakes with melted butter, then roll or sprinkle with the cinnamon-sugar mixture.
Making the Cinnamon Buttercream Frosting:
Beat butter until creamy.
Gradually add powdered sugar and cinnamon, mixing until smooth.
Pour in vanilla and heavy cream, beating until fluffy.
Pipe onto cupcakes and top with a mini churro or caramel drizzle!
