🥗 Chickpea & Egg Power Bowl 🍳🌱
A hearty, protein-rich salad full of fresh veggies!
🛒 Ingredients (Serves 2)
🥒 1/2 cucumber (sliced)
🍅 1/2 cup cherry tomatoes (halved)
🥚 2 soft-boiled eggs (halved)
🧆 1 cup cooked chickpeas
🌱 1/2 cup green peas (fresh or frozen)
🧄 1 clove garlic (minced)
🌿 2 tbsp fresh parsley (chopped)
🌶️ 1/2 tsp chili flakes (optional)
🫒 2 tbsp olive oil
🍋 1/2 lemon (juiced)
🧂 Salt & 🏺 black pepper (to taste)
🔥 Instructions
1️⃣ Boil the eggs: Cook in boiling water for 6-7 minutes, then transfer to ice water. Peel and cut in half.
2️⃣ Prepare the veggies: Slice cucumber, halve cherry tomatoes, and chop parsley.
3️⃣ Cook the chickpeas & peas: If using canned chickpeas, rinse them. If using frozen peas, blanch them for 2 minutes in hot water.
4️⃣ Make the dressing: Mix olive oil, lemon juice, minced garlic, salt, and black pepper.
5️⃣ Assemble the bowl: Layer chickpeas, peas, cucumber, tomatoes, and eggs. Sprinkle with parsley and chili flakes. Drizzle the dressing on top.
