Blueberry Broccoli Spinach Salad
Ingredients:
2 cups fresh broccoli florets
1 cup fresh spinach, chopped
1/2 cup fresh blueberries
1/4 cup red onion, thinly sliced
1/4 cup sliced almonds
1/4 cup feta cheese (optional)
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon honey
Salt and pepper to taste
Directions:
Begin by washing and preparing the vegetables. Chop the broccoli into bite-sized florets and the spinach into smaller pieces.
In a large bowl, combine the broccoli, spinach, and red onion.
Add the fresh blueberries and sliced almonds on top.
In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper until the dressing is well combined.
Drizzle the dressing over the salad and toss to combine evenly.
Sprinkle feta cheese on top if desired.
