Spicy Cajun Shrimp Nestled on Silky Sweet Corn Fettuccine
Ingredients:

1 pound large shrimp, peeled and deveined
2 tablespoons Cajun seasoning
2 tablespoons olive oil, divided
1 red bell pepper, diced
1 green bell pepper, diced
1 medium onion, diced
3 cloves garlic, minced
2 cups fresh corn kernels (from about 4 ears) or frozen corn, thawed
1 cup cherry tomatoes, halved
1 cup heavy cream
1/2 cup vegetable broth
1/2 cup grated Parmesan cheese
12 ounces fettuccine pasta
2 green onions, thinly sliced
1/4 cup fresh parsley, chopped
1 tablespoon fresh lemon juice
1/2 teaspoon smoked paprika
Salt and pepper to taste
Red pepper flakes (optional, for extra heat)

Directions:

In a large bowl, toss the shrimp with Cajun seasoning until well coated. Let marinate for 15 minutes.
Bring a large pot of salted water to a boil. Cook fettuccine according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
While pasta is cooking, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side until pink and opaque. Remove shrimp from skillet and set aside.
In the same skillet, add the remaining tablespoon of olive oil. Add diced bell peppers and onion, sautéing for 3-4 minutes until softened.
Add garlic and cook for an additional 30 seconds until fragrant.
Add corn kernels and cherry tomatoes, cooking for 2-3 minutes until the tomatoes begin to burst.
Reduce heat to medium-low and pour in the heavy cream and vegetable broth. Simmer for 5 minutes until slightly thickened.
Add Parmesan cheese and stir until melted and smooth. If sauce is too thick, add some reserved pasta water to reach desired consistency.
Add the drained fettuccine to the sauce, tossing to coat evenly.
Return the cooked shrimp to the skillet and gently fold into the pasta.
Stir in green onions, parsley, lemon juice, and smoked paprika.
Season with salt, pepper, and red pepper flakes if desired.
Serve immediately, garnished with additional Parmesan cheese and parsley.
