BARA BRITH
175g currants
175g sultanas
225g light brown sugar
300ml strong hot black tea
275g SR flour
1 egg beaten
Pour hot tea over fruit and sugar and leave overnight. Add flour and egg
Turn into greased lined tin and cook in BAKE 130 for 1.5 hours
*** since tried in 2 x 1lb tins on match on bake 130c for 1 hour and works just the same ***
Mix usually goes into 2lb loaf tin in the oven but for airfryer I used a lined Pyrex dish (it doesn’t rise much)
Great spread with butter and becomes nicer after a day or two .. enjoy
