Meatloaf with Gravy and Mashed Potatoes ππ₯β¨:
Meatloaf Ingredients:
1 lb (450 g) ground beef
1 lb (450 g) ground pork
1 cup breadcrumbs
1/2 cup milk π₯
1 egg π₯
1/2 cup diced onion π§
2 garlic cloves, minced
1/4 cup ketchup π
1 tbsp Worcestershire sauce
1 tsp dried parsley
1 tsp salt π§
1/2 tsp black pepper
Mashed Potatoes Ingredients:
6 medium potatoes, peeled and cubed π₯
4 tbsp butter
1/4 cup milk (or more, if needed)
Salt and pepper to taste
Gravy Ingredients:
2 tbsp butter
2 tbsp all-purpose flour
1 1/2 cups beef broth
1 tbsp Worcestershire sauce
Salt and pepper, to taste
Directions:
1. Prepare the Meatloaf:
1. Preheat your oven to 375Β°F (190Β°C) π₯.
2. In a large bowl, mix all meatloaf ingredients until combined. Donβt overmix!
3. Transfer the mixture to a loaf pan or form it into a loaf shape on a baking sheet.
4. Bake for 45β50 minutes or until fully cooked (internal temperature of 160Β°F/70Β°C).
5. Let it rest for 10 minutes before slicing.
2. Make the Mashed Potatoes:
1. Boil the potatoes in salted water for 15β20 minutes or until fork-tender.
2. Drain and mash them with butter and milk until smooth and creamy. Adjust with more milk if needed. Season with salt and pepper.
3. Cook the Gravy:
1. Melt butter in a small saucepan over medium heat.
2. Stir in flour and cook for 1β2 minutes until lightly golden.
3. Gradually whisk in beef broth. Add Worcestershire sauce and season with salt and pepper.
4. Simmer until thickened, about 3β5 minutes.
4. Assemble:
1. Plate slices of meatloaf on a bed of mashed potatoes.
2. Generously ladle the gravy over the top. Garnish with fresh parsley if desired πΏ.
