Buttery Garlic Pork Chops with Smooth Mashed Potatoes
Ingredients:
- 4 boneless pork chops
- 3 tablespoons butter
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 4 large potatoes, peeled and chopped
- 1/2 cup heavy cream
- 2 tablespoons butter (for mashed potatoes)
- 1/4 cup grated parmesan cheese
Directions:
Start by boiling those chopped potatoes in a large pot of water for about 15 minutes, or until they're perfectly tender. Once they're ready, drain and mash them up with butter, heavy cream, and parmesan cheese. Toss in a bit of salt and pepper to taste.
While your potatoes are cooking, grab a skillet and heat up some olive oil over medium-high heat. Give your pork chops a generous sprinkling of salt, pepper, and thyme on both sides. Sear them in the hot skillet for 4-5 minutes on each side until they're golden brown and cooked through. Once done, set them aside for a moment.
In the same skillet, melt a little butter over medium heat and add the minced garlic. Let it sauté for 1-2 minutes until it's wonderfully fragrant. Now, pop those pork chops back into the skillet, and let them bathe in the garlic butter sauce for another 2 minutes.
