****SHRIMP AVOCADO SALAD
Fresh, zesty, and perfect for a light, healthy meal.
Ingredients:
1 lb cooked shrimp, peeled and deveined
2 ripe avocados, diced
1 cup cherry tomatoes, halved
1/2 red onion, finely chopped
1 cucumber, diced
1/4 cup fresh cilantro, chopped
2 tbsp fresh lime juice
1 tbsp olive oil
Salt and black pepper to taste
Optional: 1 small jalapeño, finely diced (for heat)
Directions:
1️⃣ Prepare the Base:
In a large bowl, combine diced avocado, halved cherry tomatoes, chopped red onion, and diced cucumber.
2️⃣ Add the Protein:
Add the cooked shrimp to the bowl and gently toss to mix with the veggies.
3️⃣ Flavor It Up:
Sprinkle in the chopped cilantro and add the diced jalapeño if using.
4️⃣ Dress the Salad:
Drizzle with olive oil and squeeze in the lime juice. Season with salt and pepper to taste.
