Grilled Salmon with Herb-Crusted Crust over Creamy Fettuccine Pasta
Serves: 2

Ingredients:
For the Salmon:

2 salmon fillets (6 oz each)

2 tbsp olive oil

1 tsp garlic powder

1 tsp dried thyme

1 tsp dried oregano

1 tsp parsley (dried or fresh)

Salt and pepper, to taste

1 tbsp Dijon mustard

1 tbsp lemon juice

For the Creamy Fettuccine Pasta:

200g fettuccine pasta

1 tbsp butter

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1/4 cup fresh spinach, chopped (or parsley for a milder flavor)

1/4 cup garlic, minced

Salt and pepper, to taste

Optional: 1 tbsp lemon zest for added freshness

Instructions:
Prepare the Salmon:

Preheat your grill or grill pan to medium-high heat.

In a small bowl, mix olive oil, garlic powder, thyme, oregano, parsley, salt, and pepper.

Brush the salmon fillets with Dijon mustard and lemon juice, then rub the herb mixture onto the salmon fillets. Let them marinate for 10-15 minutes.

Grill the salmon fillets for about 4-5 minutes per side or until the fish flakes easily with a fork and has a golden, crispy herb crust.

Make the Creamy Fettuccine Pasta:

Cook the fettuccine pasta according to the package instructions. Drain and set aside, reserving 1/2 cup of pasta water.

In a large skillet, melt butter over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant.

Pour in the heavy cream and bring it to a simmer. Reduce heat and stir in the Parmesan cheese, continuing to simmer until the sauce thickens.

Add the cooked fettuccine pasta to the skillet, tossing to coat the pasta in the creamy sauce. Stir in chopped spinach (or parsley), salt, and pepper to taste. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.

Optionally, sprinkle with lemon zest for an extra touch of freshness.

Assemble the Dish:

Place a serving of creamy fettuccine pasta onto each plate. Top with the grilled salmon fillet, showing off the crispy, herb-crusted top.

Garnish with extra parsley or spinach for added color and freshness.

Serve and Enjoy:

For a cozy, homey atmosphere, serve the dish with a glass of chilled Chardonnay on the side, creating a comforting yet elegant dining experience.

Enjoy the rich flavors and the perfect balance of crispy salmon and creamy pasta.

This dish is perfect for a cozy dinner with that soft natural daylight vibe, featuring the delicate textures and bold, comforting flavors.
