Herbed Couscous Pasta with Grilled Chicken
Savory Grilled Chicken over Aromatic Couscous Pasta
Ingredients:
2 boneless, skinless chicken breasts
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
Salt and pepper, to taste
1 cup couscous
1 1/4 cups low-sodium chicken broth
1 tablespoon lemon juice
1/4 teaspoon turmeric
1/4 teaspoon cumin
1/4 teaspoon coriander
2 tablespoons fresh parsley, finely chopped
1 tablespoon fresh mint, chopped
1/4 cup cherry tomatoes, halved
1/4 cup diced cucumber
1/4 cup crumbled feta cheese (optional)
Lemon wedges for serving
Directions:
Season the chicken breasts with garlic powder, paprika, salt, and pepper.
Heat olive oil in a grill pan over medium heat. Grill the chicken for 5–6 minutes per side until cooked through. Let rest, then slice thinly.
In a saucepan, bring chicken broth, lemon juice, turmeric, cumin, and coriander to a boil.
Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
Mix in parsley, mint, cherry tomatoes, and cucumber.
Transfer couscous mixture to plates, top with sliced grilled chicken, and sprinkle with feta if using. Serve with lemon wedges.
