π Ingredients
For the Base:
β 150 g digestive biscuits (crushed)
β 75 g unsalted butter (melted)
For the Filling:
β 300 ml heavy cream (chilled)
β 200 g cream cheese (softened)
β 100 g white chocolate (melted)
β 2 tsp matcha powder (sifted)
β 2 tbsp sugar
β 1 tsp vanilla extract
For the Topping:
β 150 g fresh raspberries
β 3 tbsp raspberry jam (slightly warmed)
β Edible gold pearls (optional, for decoration)
π Directions
1: Prepare the Base
Mix crushed digestive biscuits and melted butter in a bowl until combined.
Press the mixture into the base of dome molds or a springform pan. Chill for 15 minutes to firm up.
2: Make the Filling
Beat cream cheese in a large bowl until smooth. Add sugar and vanilla extract, and mix until creamy.
In a separate bowl, whip chilled heavy cream to soft peaks. Gently fold the whipped cream into the cream cheese mixture to create a light filling.
Divide the filling into two portions. Mix melted white chocolate into one half and sifted matcha powder into the other. Stir until both mixtures are smooth and even.
3: Assemble the Domes
Spoon the matcha layer into the molds, smoothing it evenly.
Add the white chocolate layer on top, ensuring a clean divide. Tap the molds lightly to remove air bubbles.
Cover and refrigerate for 4-6 hours until fully set.
4: Add the Toppings
Once set, carefully unmold the cakes. Spoon warmed raspberry jam over the tops.
Garnish with fresh raspberries and sprinkle edible gold pearls for an elegant touch.
5: Serve and Enjoy
Serve chilled to savor the delicate harmony of matcha, white chocolate, and raspberry.
