📋 Ingredients:
🥓 4 slices of bacon, cooked crispy, cooled, and chopped
🌶️ 1-2 small jalapeno peppers, seeds removed, finely chopped
🌾 2 and 3/4 cups all-purpose flour
🥄 2 tablespoons baking powder
🍚 2 tablespoon packed dark brown sugar
🧂 1 teaspoon salt
🧈 8 tablespoons (1 stick) unsalted butter, very cold, cut into cubes
🧀 1 cup (4 ounces) grated pepper jack cheese
🌶️ 1/4 teaspoon smoked paprika
🖤 1/4 teaspoon black pepper
🥛 1 cup full-fat plain Greek style yogurt
🥚 1 large egg
For the egg wash:
🥚 1 large egg, beaten
💧 1 teaspoon water
Directions:
Preheat oven to 400°F. Cook bacon until crispy, then chop. Chop jalapenos.
Combine flour, baking powder, brown sugar, and salt. Cut in butter and cheese, then stir in paprika and pepper. Chill for 15 minutes.
Mix Greek yogurt, egg, bacon, and jalapenos into the flour mixture. Form into a ball on a floured surface and pat into a 1" thick rectangle.
Cut out scones with a biscuit cutter and place on a parchment-lined baking sheet. Brush with egg wash.
Bake for 18-20 minutes until golden brown. Serve warm.
