Fairy Cakes Recipe

Ingredients:
110g (4 oz) softened butter or margarine
110g (4 oz) caster sugar
2 large eggs
1 teaspoon vanilla extract
110g (4 oz) self-raising flour
1-2 tablespoons milk
For the icing:
225g (8 oz) icing sugar
2-3 tablespoons water
Optional: food coloring and sprinkles for decoration
Instructions:
Preheat Oven and Prepare Tin:
Preheat your oven to 180°C (160°C fan)/350°F/gas mark 4.
Line a 12-hole fairy cake tin with paper cases.
Cream Butter and Sugar:
In a large bowl, beat the softened butter and caster sugar together until the mixture is light and fluffy.
Add Eggs and Vanilla:
Add the eggs one at a time, beating well after each addition.
Stir in the vanilla extract.
Fold in Flour:
Gently fold the self-raising flour into the mixture until well combined.
Add 1-2 tablespoons of milk to achieve a soft dropping consistency.
Fill Cases and Bake:
Spoon the mixture evenly into the prepared paper cases, filling each about two-thirds full.
Bake in the preheated oven for 10-15 minutes, or until the cakes are golden brown and a skewer inserted into the center comes out clean.
Cool the Cakes:

Transfer the cakes to a wire rack to cool completely before icing.
Prepare the Icing:
In a bowl, sift the icing sugar to remove any lumps.
Gradually add 2-3 tablespoons of water, mixing until you achieve a smooth, slightly thickened icing.
If desired, add a few drops of food coloring to the icing and mix well.
