Creamy Potatoes and Peas

Ingredients:
1 pound potatoes, peeled and sliced
1 cup peas (fresh or frozen)
1 tablespoon butter
1 cup milk
1 tablespoon all-purpose flour
Salt and pepper, to taste
Instructions:
Cook Potatoes: Peel and slice potatoes. Place in a pot, cover with water, and bring to a boil. Cook until tender (15-20 minutes). Drain and set aside.
Cook Peas: If using fresh peas, shell them. Simmer peas in a separate pot of water for 6-7 minutes, until tender but firm. Drain.
Make Roux: In the same pot used for the potatoes, melt butter over medium heat. Stir in flour to form a smooth paste (roux).
Add Milk: Gradually whisk milk into the roux, ensuring a smooth sauce. Cook until slightly thickened.
Combine and Simmer: Add cooked potatoes and peas to the sauce. Gently stir to combine. Season with salt and pepper. Simmer for 5 minutes.
Serve: Remove from heat and serve warm.
