Baked Apple Fritters:

Ingredients:

For the Fritters:

2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg (optional)
1/2 teaspoon salt
1/4 cup granulated sugar
2 large eggs
1 cup whole milk
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
2 medium apples, peeled, cored, and diced (about 1 1/2 cups)
For the Glaze:

1 cup powdered sugar
2 tablespoons apple cider or milk
1/2 teaspoon vanilla extract
Pinch of salt
Instructions:

Prepare the Oven:

Preheat your oven to 375°F (190°C). Grease a baking sheet or line it with parchment paper.
Prepare the Fritter Batter:

In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg (if using), salt, and granulated sugar.
In another bowl, whisk together the eggs, milk, melted butter, and vanilla extract until well combined.
Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix; the batter will be thick.
Gently fold in the diced apples.
Shape and Bake the Fritters:

Using a spoon or your hands, shape the batter into 8-10 fritters and place them on the prepared baking sheet, leaving space between them.
Bake for 15-18 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
Prepare the Glaze:

In a small bowl, whisk together the powdered sugar, apple cider (or milk), vanilla extract, and a pinch of salt until smooth. Adjust the consistency by adding more liquid if too thick or more powdered sugar if too thin.
Glaze the Fritters:

Allow the fritters to cool for a few minutes, then drizzle the glaze over them while they are still warm.
Serve:

Enjoy the fritters warm, and store any leftovers in an airtight container at room temperature for up to two days.

Enjoy your homemade baked apple fritters!
