- ½ cup cold unsalted butter, cubed
- 3–4 tbsp cold water
- For the filling:
- 2 cups whole milk ricotta cheese, drained
- ¾ cup granulated sugar
- 3 large eggs
- 1 tsp pure vanilla extract
- Zest of 1 lemon
- Optional: ½ tsp cinnamon or orange zest
- Powdered sugar, for dusting

Directions:

1. Preheat your oven to 350°F (175°C).
2. In a large bowl, combine flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Add cold water 1 tablespoon at a time until the dough begins to come together.
3. Form the dough into a disk, wrap it in plastic wrap, and chill for 30 minutes.
4. Roll out the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Transfer the dough to the dish and trim the edges. Chill again while preparing the filling.
5. In a mixing bowl, combine drained ricotta, sugar, eggs, vanilla extract, lemon zest, and optional cinnamon or orange zest. Mix until smooth and creamy.
6. Pour the filling into the prepared crust and smooth the top.
7. Bake for 45–50 minutes or until the filling is set and the crust is golden brown.
8. Allow the pie to cool completely. Dust with powdered sugar before serving.
