Buttery Pecan Snowball Cookies
Ingredients:
- 1 cup butter softened
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 1 1/2 teaspoons vanilla extract
- 2 1/4 cups flour
- 1 cup finely chopped pecans
- 1 cup powdered sugar for dusting
Directions:
1. Preheat oven to 350°F (175°C).
2. In a large bowl, cream together the softened butter, 1/2 cup powdered sugar, salt, and vanilla extract until light and fluffy.
3. Gradually add the flour, mixing until just combined.
4. Stir in the finely chopped pecans until evenly distributed.
5. Shape dough into 1-inch balls and place them on an ungreased baking sheet about 2 inches apart.
6. Bake for 12-15 minutes or until the edges are just lightly golden.
7. Remove from oven and let cookies cool for 5 minutes on the baking sheet.
8. While still warm, roll the cookies in powdered sugar to coat completely.
9. Transfer to a wire rack and let cool completely before rolling again in powdered sugar for a thicker coating.
