No-Bake Cookie Bars
Ingredients:
For the Crust:
- 2 cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup brown sugar
- ½ teaspoon cinnamon
For the Filling:
- 1 package (8 oz) cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 ½ cups white chocolate chips, melted
- ½ cup chopped walnuts (optional)
Directions:
1. In a medium bowl, combine graham cracker crumbs, melted butter, brown sugar, and cinnamon. Mix until the crumbs are evenly coated and the mixture resembles wet sand.
2. Press the crumb mixture firmly into the bottom of a greased 9x9 inch baking pan to form an even crust layer. Place in the refrigerator to chill while preparing the filling.
3. In a large bowl, beat the softened cream cheese until smooth and creamy.
4. Add the powdered sugar and vanilla extract, and continue to beat until well combined and fluffy.
5. Gently fold in the melted white chocolate chips until the mixture is smooth and uniform.
6. Stir in the chopped walnuts, if using.
7. Spread the filling evenly over the chilled crust, smoothing the top with a spatula.
8. Refrigerate for at least 3 hours, or until the bars are set and firm.
9. Once set, cut into squares and serve chilled.
