Fried Cornbread
Ingredients:
- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup buttermilk
- 1 large egg
- 2 tbsp melted butter
- Oil for frying
Directions:
1. In a large bowl, combine the cornmeal, all-purpose flour, baking powder, and salt.
2. In a separate bowl, whisk together the buttermilk, egg, and melted butter until well blended.
3. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
4. Heat oil in a skillet over medium heat until hot but not smoking.
5. Spoon batter into the skillet, forming small rounds or dollops, and fry for about 3-4 minutes on each side, or until golden brown and cooked through.
6. Remove fried cornbread from the oil and drain on paper towels to remove excess oil.
7. Serve warm as a side or snack.
