GRANDPA'S HASH BROWNS 2 1/2 cups cold, peeled boiled potatoes* 1/4 cup butter 1 small grated onion...

GRANDPA'S HASH BROWNS
2 1/2 cups cold, peeled boiled potatoes*
1/4 cup butter
1 small grated onion
salt and pepper, to taste
1 tsp. garlic powder or to taste
Coarsely shred or grate cold, cooked potatoes.
Melt 2 Tbsp. butter in a skillet; add grated onion and sauté for 2 minutes. Add the potatoes and seasoning and mix well. Press the potatoes over half the bottom of the skillet. Cook until the bottom is well browned.

Grease the other half of the skillet with remaining 2 Tbsp. butter and invert the potatoes over it. Cook until well browned, remove carefully to a serving dish.

*boil potatoes in their jacket just until tender enough to put a knife through them. Cool in the refrigerator. Peel and grate
