I made Cheesy Garlic Cajun Chicken Tortellini with Velveeta Cream for dinner, and it was so good! Juicy chicken, cheesy pasta, and that creamy Cajun sauce made it such an easy, comforting meal. Perfect weeknight dinner idea!
Ingredients:
1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
2 tbsp olive oil
2 tbsp Cajun seasoning
1 tsp garlic powder
½ tsp smoked paprika
20 oz cheese tortellini (fresh or refrigerated)
4 tbsp butter
4 cloves garlic, minced
¼ cup all-purpose flour
3 cups milk
8 oz Velveeta cheese, cubed
4 oz cream cheese, softened
1 cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
Salt & pepper, to taste
Directions:
1. Bring a large pot of salted water to a boil and cook tortellini until tender. Drain and set aside.
2. Toss chicken with olive oil, Cajun seasoning, garlic powder, and smoked paprika.
3. Heat a skillet over medium-high, add chicken, and cook 6–8 min until golden and cooked through. Remove to a plate.
4. In the same skillet, melt butter over medium heat. Add garlic and cook 1 min until fragrant.
5. Sprinkle in flour, whisking for 1–2 min to form a smooth roux.
6. Slowly whisk in milk and let simmer 3–5 min until slightly thickened.
7. Lower heat and stir in Velveeta and cream cheese until melted and creamy.
8. Mix in mozzarella and Parmesan until smooth. Season with salt and pepper.
9. Return chicken and tortellini to the skillet, tossing until coated in the cheesy Cajun garlic sauce.
10. Serve warm, topped with parsley or chives if desired.
