CHICKEN TACO CROCKPOT SOUP
1 onion, chopped
1 16oz can chili beans
1 16oz. can black beans
2 cups frozen corn
1 8oz can tomato sauce
1 12oz. bottle of beer
2 10oz. cans Ro*tel, undrained
1 package taco seasoning
3 skinless, boneless chicken breast
1/2 cup fresh cilantro, chopped
Optional toppings: shredded cheddar cheese, sour cream, crushed tortilla chips
Place onion, both beans, corn, tomato sauce, beer, and RO*TEL into crockpot. Stir in taco seasoning. Lay chicken breast over the mixture. Set the crockpot on low and allow to cook for 5 hours. Remove chicken breast, cool just enough to shred chicken then return it to the crockpot, stir and continue cookie for 2 more hours.
Add cilantro, stir. Serve with desired toppings.
