Chicken Fried Steak & Gravy

4 cube steaks (about ½ inch thick)
Salt & black pepper, to taste
1 cup all-purpose flour
1 tsp baking powder
1 tsp paprika
1 tsp garlic powder

2 large eggs
½ cup buttermilk (or milk)
Vegetable oil, for frying
For the Gravy
3 tbsp pan drippings (from frying the steaks)
3 tbsp all-purpose flour
2 ½ cups whole milk
Salt & black pepper, to taste
Preparation Steps
Prepare the dredge: In one bowl, whisk flour, baking powder, paprika, garlic powder, cayenne, salt, and pepper. In another bowl, whisk eggs with buttermilk.
Season steaks: Pat cube steaks dry, season with salt and pepper.
Dredge and coat: Dip each steak into the flour mixture, then egg mixture, then back into flour. Press gently so the coating sticks.
Fry: Heat about ½ inch oil in a large skillet over medium-high heat. Fry steaks 3–4 minutes per side until golden brown and crispy. Transfer to a wire rack or paper towels to drain.
