Pink Sugar Cookies
Ingredients:
- 1/2 cup unsalted butter, softened
- 1/4 cup vegetable oil
- 1/2 cup granulated sugar
- 1/2 cup powdered sugar
- 1 egg
- 1/2 teaspoon pure vanilla extract
- 1/2 teaspoon pure almond extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
For the frosting:
- 1/2 cup unsalted butter, softened
- 6-1/2 cups powdered sugar
- 2-1/2 tablespoons milk
- 1 teaspoon pure almond extract
- Pink gel food coloring
Directions:
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a large bowl, cream together the softened butter, vegetable oil, granulated sugar, and powdered sugar until light and fluffy.
3. Beat in the egg, vanilla extract, and almond extract until well combined.
4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
7. Bake for 8-10 minutes, or until the edges are lightly golden.
8. Remove cookies from the oven and let cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
9. For the frosting, beat the softened butter until creamy. Gradually add powdered sugar, milk, and almond extract, beating until smooth and fluffy.
10. Add pink gel food coloring a little at a time until desired shade is reached.
11. Once cookies are completely cooled, frost as desired and let set before serving.
