Mediterranean Grilled Cheese Sandwich

Ingredients:

4 slices whole grain bread
4 oz (about 1 cup) shredded mozzarella cheese
1/2 cup roasted red bell peppers, sliced
1/4 cup sliced black olives
1/4 cup sliced sun-dried tomatoes
2 tablespoons fresh basil leaves, chopped
2 tablespoons extra virgin olive oil
1 clove garlic, minced
Salt and pepper, to taste
Directions:

Preheat a skillet or grill pan over medium heat.
In a small bowl, mix together the olive oil and minced garlic.
Brush one side of each slice of bread with the garlic-infused olive oil.
Place two slices of bread, oil side down, onto the preheated skillet or grill pan.
Layer shredded mozzarella cheese evenly on top of each slice of bread.
Top the cheese with sliced roasted red bell peppers, black olives, sun-dried tomatoes, and chopped fresh basil.
Place the remaining two slices of bread, oil side up, on top of the fillings to form sandwiches.
Cook the sandwiches for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
Remove the sandwiches from the skillet or grill pan and let them cool for a minute before slicing.
Serve the Mediterranean grilled cheese sandwiches warm and enjoy!
