White Chocolate Cupcakes Recipe
Ingredients:
For the cupcakes:
1 cup (6 oz) white chocolate chips or chopped white chocolate
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup whole milk
For the white chocolate frosting:
4 oz white chocolate, chopped
1/2 cup unsalted butter, softened
2 cups powdered sugar
1 tsp vanilla extract
2-3 tbsp heavy cream or milk (to adjust consistency)
Instructions:
For the cupcakes:
Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
In a small bowl, melt the white chocolate by microwaving it in 20-second intervals, stirring in between, until smooth. Set it aside to cool slightly.
In a large bowl, cream together the softened butter and sugar until light and fluffy using an electric mixer. This should take about 2-3 minutes.
Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract and melted white chocolate.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined. The batter will be thick.
Spoon the batter into the cupcake liners, filling each about 2/3 full.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
For the white chocolate frosting:
Melt the white chocolate in the microwave or over a double boiler. Let it cool slightly before using it in the frosting.
In a large bowl, beat the butter until smooth and creamy. Add the melted white chocolate and continue beating until well combined.
Gradually add the powdered sugar, one cup at a time, mixing until smooth. Add vanilla extract.
Add the heavy cream or milk, one tablespoon at a time, to achieve your desired frosting consistency.
Once the cupcakes are completely cool, frost them with the white chocolate frosting using a spatula or a piping bag.
Optional Garnishes:
You can decorate the cupcakes with extra white chocolate shavings, mini white chocolate chips, or even a few fresh berries for contrast.
These cupcakes are rich and flavorful, with the sweetness of white chocolate shining through. Enjoy your treat! Let me know how they turn out!
