Muffins That Taste Like Doughnuts π©π
Ingredients:
3/4 cup sugar
1 large egg
1 1/2 cups all-purpose flour
2 tsp baking powder
1/4 tsp salt
1/4 tsp ground nutmeg
1/4 cup vegetable oil
3/4 cup milk
1 tsp vanilla extract
2 tbsp melted butter
1/2 cup sugar mixed with 1 1/2 tsp cinnamon (for rolling)
Directions:
Preheat oven to 375Β°F (190Β°C) and grease or line a 12-cup muffin tin.
In a mixing bowl, beat together the sugar and egg until light and fluffy.
In another bowl, whisk the flour, baking powder, salt, and nutmeg.
Stir the dry ingredients into the egg mixture, alternating with the oil, milk, and vanilla, mixing just until combined.
Fill each muffin cup about 2/3 full with the batter.
Bake for 15β18 minutes, or until the tops spring back when touched and a toothpick comes out clean.
While the muffins are still warm, brush each one with melted butter and roll in the cinnamon sugar mixture until coated.
Let them cool slightly, then enjoy warm or at room temperature!
