Golden Sweet Potato Falafel Bites Perfect for Snacking or Salads 💪💛

Ingredients:
1 medium sweet potato, baked or steamed until tender, cooled (about 1 cup / 200g mashed)
1 can (15 oz / 425g) chickpeas, rinsed and drained well
1/2 cup / 25g fresh cilantro or parsley, roughly chopped
1/4 cup / 30g almond flour or chickpea flour
2 cloves garlic, roughly chopped
1 small shallot or 1/4 red onion, roughly chopped
1 tablespoon / 15ml lemon juice
1 teaspoon / 3g ground cumin
1 teaspoon / 3g ground coriander
1 teaspoon / 3g ground turmeric
1/2 teaspoon / 3g sea salt
1/4 teaspoon / 0.5g black pepper
1/4 teaspoon / 0.5g baking powder (optional, for fluffiness)
2 tablespoons / 30ml olive oil (optional, for richness and browning)

Directions:
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Make sure the cooked sweet potato is cooled and mashed. Pat the rinsed chickpeas very dry with paper towels.
3. Add the mashed sweet potato, dried chickpeas, cilantro/parsley, chosen flour, garlic, shallot/onion, lemon juice, cumin, coriander, turmeric, salt, pepper, optional baking powder, and optional olive oil to a food processor.
4. Pulse the mixture several times until it's combined but still slightly coarse and textured, not a smooth puree. Scrape down the sides as needed.
5. Transfer the mixture to a bowl. If it seems too wet to handle, chill it for 15-20 minutes.
6. Using slightly damp hands or a small cookie scoop, form the mixture into small balls or patties (about 1-1.5 inches / 2.5-4 cm). Place them on the prepared baking sheet.
7. Lightly brush or spray the tops of the falafel bites with a little extra olive oil (optional, for better browning).
8. Bake for 15 minutes, then carefully flip the falafel bites and bake for another 10-15 minutes, or until golden brown, firm, and cooked through.
9. Serve warm with tahini sauce, in pitas, or on salads.
