Tomato & Burrata Pasta with Basil & Garlic Oil

Ingredients:
For the Pasta:
12 oz spaghetti or fettuccine

1 tbsp olive oil

3 garlic cloves, thinly sliced

1 1/2 cups cherry tomatoes, halved

1/2 cup fresh basil leaves, torn

2 balls burrata cheese, torn into pieces

Salt and black pepper to taste

For the Garlic Basil Oil:
1/4 cup olive oil

2 garlic cloves, minced

1/4 cup fresh basil leaves, finely chopped

1/4 tsp crushed red pepper flakes (optional)

Directions:
Cook pasta according to package instructions in salted water. Drain, reserving 1/4 cup of pasta water.

In a small skillet, heat olive oil over medium heat. Add sliced garlic and sauté until fragrant, about 1-2 minutes. Remove from heat.

Stir in chopped basil and crushed red pepper flakes (if using). Set aside.

In a large skillet, heat olive oil over medium heat. Add halved cherry tomatoes and sauté for 3-4 minutes until softened.

Add cooked pasta to the skillet with the tomatoes, tossing to coat. Add reserved pasta water if needed for a silkier texture.

Drizzle the garlic basil oil over the pasta and toss in fresh basil leaves. Season with salt and black pepper.

Plate the pasta and top with torn burrata. Serve immediately and enjoy!
