Berry Ice Cream
Ingredients:
• 1 1/2 quarts strawberry or raspberry ice cream
• 1 cup fresh raspberries
• 1/2 cup chopped strawberries
• 1/2 cup crushed graham crackers or cookie base (optional)
• Extra berries and mint leaves for topping
Preparation (Easy!):
1. Let the ice cream soften slightly at room temperature for about 10 minutes.
2. In a springform pan or round cake pan lined with parchment paper, spread half the softened ice cream evenly.
3. Add a layer of chopped strawberries and raspberries.
4. Spread the remaining ice cream on top and smooth it out.
5. Freeze for at least 3 hours or until firm.
6. Before serving, scoop 3–4 ice cream balls on top and decorate with whole berries and mint leaves.
