Lush Raspberry Pistachio Dessert Squares

Ingredients:
1 cup unsalted butter, softened
1/2 cup powdered sugar
2 cups all-purpose flour
1/4 teaspoon salt
3/4 cup raspberry preserves
1/2 cup chopped pistachios
1 (8 oz) package cream cheese, softened
1/3 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
Directions:
Preheat oven to 350°F (175°C). Line a 9x13-inch baking dish with parchment paper and lightly grease.
In a mixing bowl, cream together butter and powdered sugar until light and fluffy.
Add flour and salt, mixing until a crumbly dough forms. Press the dough evenly into the bottom of the prepared baking dish.
Bake the crust for 15 minutes, or until the edges begin to lightly brown.
Remove from the oven and spread raspberry preserves evenly over the warm crust.
In a separate bowl, beat cream cheese with granulated sugar until smooth. Add egg and vanilla extract, and beat until combined.
Pour cream cheese mixture over the raspberry layer and gently smooth the top.
Sprinkle chopped pistachios evenly over the top.
Return to oven and bake for an additional 25-30 minutes, or until the edges are set and the center slightly jiggles.
Cool completely, then refrigerate for at least 2 hours before slicing into bars.
