Garlic Parmesan Tortellini with Chicken and Broccoli in Creamy Sauce
Ingredients:
12 oz cheese tortellini (fresh or frozen)
2 boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
4 cloves garlic, minced
1/2 cup chicken broth
1 cup heavy cream
1 cup Parmesan cheese, grated
2 cups broccoli florets (steamed or cooked)
Salt and pepper, to taste
1 teaspoon Italian seasoning
Fresh parsley, chopped (for garnish)
Directions:
Cook the Tortellini: Boil the tortellini according to the package instructions. Once done, drain and set aside.
Sear the Chicken: Heat olive oil in a large skillet over medium heat. Season the chicken pieces with salt, pepper, and Italian seasoning. Cook for 6-8 minutes, or until the chicken is fully cooked. Remove the chicken from the skillet and set aside.
Sauté Garlic: In the same skillet, add the minced garlic and sauté for 1 minute, until fragrant and golden.
Make the Creamy Sauce: Pour in the heavy cream and chicken broth, stirring to combine. Let the sauce simmer for about 3-4 minutes, allowing it to thicken slightly.
Melt the Parmesan: Add the grated Parmesan cheese to the sauce and stir until it melts smoothly, creating a creamy texture.
Combine Everything: Return the cooked chicken, broccoli, and tortellini to the skillet. Toss gently to coat everything in the creamy sauce.
Serve & Garnish: Serve the dish hot, and sprinkle with freshly chopped parsley for a burst of color and flavor.
