Decadent Cookie Monster Cheesecake
Ingredients:
For the Crust:
2 cups crushed chocolate chip cookies
1/4 cup melted butter
For the Cheesecake Filling:
24 ounces cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
1 cup sour cream
1 cup crushed chocolate chip cookies
For the Topping:
1 cup heavy whipping cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
1 cup mini chocolate chip cookies
1/2 cup chocolate chips, melted
Directions:
Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
In a medium bowl, combine the crushed chocolate chip cookies and melted butter. Press the mixture into the bottom of the prepared pan to form the crust. Set aside.
In a large bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and continue beating until well combined. Mix in the vanilla extract.
Add the eggs one at a time, beating well after each addition. Stir in the sour cream until the mixture is smooth and creamy. Gently fold in the crushed chocolate chip cookies.
Pour the cheesecake filling over the crust in the springform pan. Bake for 55-60 minutes, or until the center is set and the edges are lightly browned. Allow the cheesecake to cool completely in the pan on a wire rack.
For the topping, whip the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form. Spread the whipped cream over the cooled cheesecake.
Drizzle the melted chocolate chips over the top and garnish with mini chocolate chip cookies. Refrigerate for at least 4 hours or overnight before serving.
