No-Bake Jelly Marshmallow Slice is a fun, fruity layered dessert that’s perfect for birthdays, school events, or anytime you want to impress without turning on the oven.
Ingredients (Makes 20 squares):
For the base:
- 250 g plain sweet biscuits (e.g. Arnott’s Marie), crushed
- 60 g desiccated coconut
- 100 g unsalted butter, melted
For the jelly marshmallow layer:
- 85 g packet of jelly crystals (strawberry or raspberry flavour)
- 250 mL boiling water
- 1 tbsp (10 g) gelatine powder
- 200 mL cold water
- 200 g pink and white marshmallows, chopped or mini
- 1 tsp vanilla extract
Optional topping:
- Extra desiccated coconut
- Rainbow sprinkles or edible glitter
- Fresh berries (if serving on the day)

Step 1: Prepare the base
1. Line a 20 cm x 30 cm slice tin with baking paper.
2. In a bowl, mix crushed biscuits, coconut, and melted butter until well combined.
3. Press firmly and evenly into the base of the tin.
4. Chill in the fridge while you prepare the marshmallow layer.

Step 2: Make the jelly marshmallow
1. In a large heatproof bowl, dissolve the jelly crystals and gelatine powder in boiling water.
2. Stir in the cold water and let the mixture cool to room temperature.
3. Add the marshmallows and allow them to soften for 5–10 minutes.
4. Use electric beaters to beat the mixture for 4–5 minutes, until pale, thick, and fluffy.
5. Beat in the vanilla extract.

Step 3: Assemble the slice
1. Pour the marshmallow mixture over the chilled base and smooth the top.
2. Sprinkle with extra coconut or sprinkles, if using.
3. Refrigerate for 4–6 hours, or until completely set.
