- 2 ribeye steaks (about 1 inch thick)
- Salt and freshly ground black pepper
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, smashed
- 2 sprigs fresh rosemary or thyme
Instructions:
1. Preparation: Take the steaks out of the refrigerator about 30 minutes before cooking to bring them to room temperature. Pat them dry with paper towels.
2. Season: Generously season both sides of the steaks with salt and black pepper.
3. Preheat Pan: Heat a cast-iron skillet over high heat until very hot.
4. Sear Steaks: Add the olive oil to the hot pan. Place the steaks in the pan and sear for 3-4 minutes on each side for medium-rare, or adjust the time according to your desired doneness.
5. Add Butter and Herbs: Reduce the heat to medium and add the butter, garlic, and herbs to the pan. Tilt the pan slightly and use a spoon to baste the steaks with the melted butter for an additional minute or two.
6. Rest: Remove the steaks from the pan and let them rest on a cutting board for about 5 minutes before slicing.
7. Serve: Slice the steaks against the grain and serve with your favorite side dishes.
