This is my absolute favourite potato salad. It's my own take on a salad that we grew up back home. Home being Newfoundland, Canada for those new to my page. Mine might be a little different, but it's a mashed potato salad recipe with mayonnaise and finely diced vegetables. This is best served cold. So, it's recommended to let it chill for an hour or so before serving. Enjoy!!
