- 1/4 cup chopped fresh cilantro (15 grams)
- 1/4 cup chopped roasted peanuts (35 grams)
- 1 small red chili, thinly sliced (optional) (5 grams)
- Dressing:
- 3 tablespoons lime juice (45 ml)
- 2 tablespoons soy sauce (30 ml)
- 1 tablespoon maple syrup or honey (15 ml)
- 1 teaspoon sesame oil (5 ml)
- 1/2 teaspoon grated fresh ginger (1 gram)
directions:
1. In a large bowl, gently combine the diced mangoes, shredded carrots, chopped red bell pepper, and chopped cilantro.
2. In a small bowl or jar, whisk together the lime juice, soy sauce, maple syrup or honey, sesame oil, and grated ginger until well combined.
3. If desired, add the thinly sliced red chili to the dressing for extra spice.
4. Just before serving, pour the dressing over the salad and toss gently to coat.
5. Sprinkle with chopped roasted peanuts and serve immediately.
