**Ingredients**
- 1/2 cup butter, softened
- 1 cup sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 4 cups all-purpose flour
- 4 teaspoons baking powder
- 1-1/2 teaspoons ground ginger
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup molasses
- 1/2 cup buttermilk
- 2 cups apple butter (plus extra if you like, about 2 pints)
**Directions**
1. Preheat oven to 450°F. Line a baking sheet with parchment paper.
2. In a large bowl, cream the butter and sugar until light and fluffy. Beat in eggs and vanilla.
3. In a separate bowl, whisk together flour, baking powder, ginger, baking soda, and salt.
4. Gradually add the dry mixture to the creamed mixture, alternating with molasses and buttermilk. Beat well after each addition.
5. Drop two scant 1/4-cup portions of batter at least 7 inches apart on the prepared baking sheet. With well-floured fingers, pat each portion into a 5- to 6-inch circle.
6. Bake for 2-3 minutes, until golden brown. Transfer the cakes to wire racks to cool. Repeat with the remaining batter.
**To Assemble**
1. Place one cake layer on a serving plate and spread with 2-4 tablespoons of apple butter.
2. Repeat layering four more times, topping with a sixth layer (you’ll have two or three stack cakes).
3. Cover and refrigerate until serving. For best results, allow the cake to rest at least 24 hours before eating; the longer it sits, the more moist it becomes.
