Avocado and Tomato Bruschetta
Ingredients:
4 slices of sourdough bread
1 ripe avocado, diced
1 cup cherry tomatoes, diced
1 tablespoon fresh parsley, finely chopped
1 clove garlic, halved
2 tablespoons extra virgin olive oil
Freshly cracked black pepper, to taste
Sea salt, to taste
Instructions:
Toast the Bread:
Preheat a grill pan or toaster. Lightly toast the sourdough slices until golden and crispy. Rub each slice with the cut side of the garlic clove while warm for a subtle flavor boost.
Prepare the Topping:
In a bowl, combine diced avocado, cherry tomatoes, and parsley. Drizzle with 1 tablespoon of olive oil and season with sea salt and freshly cracked black pepper. Gently mix to combine.
Assemble the Bruschetta:
Spoon the avocado and tomato mixture evenly onto the toasted sourdough slices.
Finish and Serve:
Drizzle the remaining olive oil over the bruschetta for added richness. Serve immediately as a light appetizer or snack.
