Ingredients:

- 1 cup oat flour (100g)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups plant-based milk (360ml)
- 2 tablespoons olive oil
- 1 tablespoon maple syrup or agave
- 1 tablespoon apple cider vinegar

Directions:
1. Preheat oven to 375Β°F (190Β°C). Grease and line a loaf pan (9x5 inch) with parchment paper.
2. In a large bowl, whisk together buckwheat flour, oat flour, baking powder, baking soda, and salt.
3. In a separate bowl, whisk together plant-based milk, olive oil, maple syrup, and apple cider vinegar.
4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
5. Pour the batter into the prepared loaf pan and spread evenly.
6. Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
