Mushroom Grilled Cheese Sandwich
Ingredients:
4 slices bread (your choice)
2 tablespoons butter, softened
2 cups sliced mushrooms
1 tablespoon olive oil
2 cloves garlic, minced
Salt and pepper to taste
1 cup shredded mozzarella cheese
1/2 cup shredded Swiss cheese
Fresh parsley for garnish (optional)
Directions:
Heat olive oil in a skillet over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
Add sliced mushrooms to the skillet and cook until they release their moisture and become tender, about 5-7 minutes. Season with salt and pepper to taste.
Spread softened butter on one side of each slice of bread.
Place a slice of bread, buttered side down, on a clean surface.
Layer shredded mozzarella cheese, sautéed mushrooms, and shredded Swiss cheese on top of the bread slice.
Top with another slice of bread, buttered side facing up.
Repeat with the remaining ingredients to make 2 sandwiches.
Heat a skillet or griddle over medium heat. Place the sandwiches on the skillet or griddle and cook for 3-4 minutes on each side, until golden brown and the cheese is melted.
Remove from heat and let cool slightly before slicing.
Garnish with fresh parsley if desired and serve hot.
