One-Pot Creamy Honey Mustard Chicken Penne
Ingredients:
2 boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon paprika
2 cups penne pasta
2 cups chicken broth
1 cup heavy cream
3 tablespoons Dijon mustard
2 tablespoons honey
1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
½ teaspoon red pepper flakes (optional)
1 cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped (for garnish)
Instructions:
Sauté the Chicken: In a large pot or deep skillet, heat olive oil over medium heat. Add the chicken pieces, season with salt, pepper, and paprika, and cook until golden brown, about 5-7 minutes. Remove the chicken from the pan and set aside.
Cook the Garlic: In the same pot, add the minced garlic and sauté for about 30 seconds until fragrant.
Add Liquids & Pasta: Pour in the chicken broth, heavy cream, Dijon mustard, honey, thyme, and red pepper flakes. Stir well to combine. Add the penne pasta and bring to a gentle boil.
Simmer: Reduce the heat to medium-low, cover, and let it simmer for about 12-15 minutes, stirring occasionally, until the pasta is tender.
Add Chicken & Cheese: Return the cooked chicken to the pot and stir in the mozzarella and Parmesan cheese until melted and creamy.
Garnish & Serve: Remove from heat, garnish with fresh parsley, and serve warm.
