Grandma’s Fluffy Cinnamon Sugar Donut Muffins

Muffin Ingredients:

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1 large egg

1 tsp vanilla extract

1 1/2 cups all-purpose flour

1 1/2 tsp baking powder

1/4 tsp baking soda

1/4 tsp salt

1/4 tsp ground nutmeg (key for that donut flavor!)

1/2 cup milk (whole milk preferred)

Optional: 1/4 cup sour cream or plain yogurt for extra moisture (replace part of the milk)

Cinnamon Sugar Coating:

1/3 cup granulated sugar

1 tsp ground cinnamon

1/4 cup unsalted butter, melted (for dipping)

Instructions:

1. Preheat Oven & Prep Pan
Preheat your oven to 350°F (175°C).

Lightly grease a 12-cup muffin tin or line with muffin liners.

2. Make the Muffin Batter
In a large bowl, cream the butter and sugar until light and fluffy (about 2–3 minutes).

Beat in the egg and vanilla extract.

In another bowl, whisk together the flour, baking powder, baking soda, salt, and nutmeg.

Add dry ingredients to wet in 2 batches, alternating with the milk (and sour cream, if using), mixing just until combined.

Batter will be thick and fluffy!

3. Bake
Scoop batter into muffin cups, filling each about 2/3 full.

Bake for 18–20 minutes, or until golden and a toothpick comes out clean.

Let cool in pan for 5 minutes, then transfer to a wire rack.

4. Cinnamon Sugar Dip
In a small bowl, mix 1/3 cup sugar and 1 tsp cinnamon.

Melt 1/4 cup butter in a separate bowl.

While muffins are still warm, dip the tops in butter, then roll or sprinkle with cinnamon sugar.
