• Zest of ½ lemon 🍋
• 1 tsp chopped fresh parsley or dill (optional)
• Salt & pepper to taste



🥔 Parmesan-Crusted Roasted Potatoes
• 2 medium Yukon Gold potatoes, diced
• 1 tbsp olive oil
• 1 clove garlic, minced 🧄
• 2 tbsp grated Parmesan cheese
• 1 tsp dried oregano
• Salt & pepper to taste



🍇 Fig-Balsamic Drizzle
• 2 tbsp fig preserves
• 1 tbsp balsamic vinegar
Water (to thin, if needed)



🍃 Garnish
• 1 tbsp chopped parsley
• Lemon wedges for serving 🍋



🔥 Instructions

1. Marinate & Grill the Chicken
• In a bowl, combine olive oil, lemon zest, lemon juice, garlic, oregano, salt, and pepper.
• Toss chicken slices in the marinade.
• Heat a grill pan or skillet over medium heat and cook chicken for 4–5 minutes per side, until golden and fully cooked.
• Keep warm.



2. Make the Lemon-Herb Alfredo Sauce
• In a medium saucepan, melt butter over medium heat.
• Add garlic and sauté until fragrant.
• Stir in heavy cream, Parmesan, lemon zest, and fresh parsley or dill, if using.
• Cook until the sauce thickens slightly, about 5 minutes.
• Season with salt and pepper to taste.
• Keep warm.



3. Roast the Potatoes
• Preheat oven to 400°F (200°C).

• Add roasted Parmesan potatoes on the side.
