These make a yummy side dish, and something a little different for #easterdinner
Great for a potluck. This recipe makes about 5 dozen 1" balls, so you can cut the recipe in half. Or freeze half, store in an airtight container or freezer bag in the freezer for for up to one month.
CRUNCHY CHEESY POTATO BITES
3 1/2 cups crushed Cornflakes
2 cups cooked, mashed potatoes
2 cups finely chopped cooked ham or crispy bacon
1 cup cheddar cheese, shredded
1 small onion, chopped
1/4 cup scallion greens, chopped
1/4 cup milk
1 large egg, beaten
1 tsp. yellow mustard
1/4 cup mayonnaise
salt 'n pepper to taste
Place Cornflakes into a shallow mixing bowl and set aside
In a large mixing bowl combine the remaining ingredients till fully incorporated. Using a small cookie scoop or a Tablespoon form mixture into 1" balls, and roll in Cornflakes. Place on large baking sheet and refrigerate for 30 minutes.
Preheat the oven to 350 degrees F. Bake for 30 minutes or until golden brown. Serve warm with the honey mustard dip
Dip
1/2 cup Dijon mustard ( I use Chick-Fil-A sauce)
2 Tbsp. honey or hot honey
2 Tbsp. mayonnaise
mix together, cover, and refrigerate until ready to serve.
