Berry Trifle
Ingredients:
For the custard layer:
2 cups heavy cream
1/4 cup powdered sugar
1 tsp vanilla extract
For the fruit layer:
1 cup mixed berries (raspberries, blackberries, strawberries, blueberries)
2 tbsp honey or maple syrup (optional, to sweeten the berries)
For the sponge or cake layer:
1 store-bought pound cake or sponge cake, cut into cubes (or use ladyfingers)
For garnish:
Additional fresh berries (like raspberries, blackberries, cherries)
Fresh mint leaves (for garnish)
Powdered sugar (for dusting)
Instructions:
Prepare the cream:
In a mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form. Be careful not to overwhip. Set aside.
Prepare the fruit:
Wash and dry the mixed berries. If you prefer, you can sweeten the berries by tossing them gently with honey or maple syrup, and let them sit for a few minutes to release some juice.
Assemble the trifle:
Start by placing a layer of cubed cake or ladyfingers at the bottom of each glass or trifle dish.
Add a layer of whipped cream on top of the cake, smoothing it out with a spoon.
Add a generous layer of fresh berries, followed by another layer of whipped cream.
Repeat the layers until you fill the glasses or dish, finishing with a layer of cream on top.
Garnish:
Top with fresh berries and a sprig of mint for a beautiful and fresh presentation.
If desired, dust with a little powdered sugar for extra sweetness.
Chill and Serve:
Refrigerate the trifles for at least 1-2 hours before serving to allow the flavors to meld and the dessert to firm up slightly.
