Creamy - Potato Ham Soup
Perfect for this Spring weather!
It was a great meal to go with your grilled cheese sandwich. So creamy, meaty and delicious.
Recipe:
4 cups potatoes, diced
2 cups diced ham
1 cup celery diced
1 cup corn
2 cups onion diced
1/4 cup butter
1/4 cup flour
2 cups chicken broth
2 cups milk
1 tsp Greek seasoning (see my homemade recipe)
In a large pot, add butter and let it melts. Saute the onions until translucent. Add potatoes. Saute for about 1-2 minutes. Add sliced ham. Add flour and mix together with the vegetables. Add the broth and the milk. Let it boils. Once it boils, let it simmer till the potatoes are tender. Then, celery and corn. Cook for 2-3 minutes. Season with Greek seasoning. Add salt and pepper to taste. Ready to serve. Enjoy your delicious soup!
