Sausage, Egg, and Cheese Puff Pastry Rolls
Ingredients:
1 package (2 sheets) puff pastry (store-bought)
1 lb breakfast sausage (pork, turkey, or your choice)
4 large eggs
1/2 cup shredded cheddar cheese (or your favorite cheese)
1 tablespoon butter (for scrambling eggs)
Salt and pepper, to taste
1 tablespoon fresh parsley, chopped (optional, for garnish)
1 egg (for egg wash)
Instructions:
Prepare the sausage:
Heat a skillet over medium heat and add the breakfast sausage. Cook, breaking it apart with a spoon, until browned and fully cooked, about 7-10 minutes. Drain any excess grease, then set aside.
Scramble the eggs:
In a separate pan, melt butter over medium heat. Crack the eggs into a bowl, whisk them with a pinch of salt and pepper, and pour them into the pan.
Scramble the eggs gently, cooking until they are soft and fully set, about 3-4 minutes. Remove from the heat and set aside.
Prepare the puff pastry:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Roll out the puff pastry sheets on a lightly floured surface. If using store-bought pastry, you can cut each sheet into smaller rectangles (about 3-4 per sheet) or keep them as large sheets, depending on your preference.
Assemble the rolls:
Place a spoonful of cooked sausage on each rectangle of puff pastry. Top with scrambled eggs and a generous sprinkle of shredded cheddar cheese.
Carefully roll up each pastry sheet, sealing the edges and brushing with a little water to make sure the seams stick.
Bake the rolls:
Whisk the remaining egg and brush it over the top of each roll for a golden finish.
Place the rolls on the prepared baking sheet and bake for 20-25 minutes, or until the puff pastry is golden brown and crispy.
Serve:
Remove from the oven and let cool for a few minutes.
Garnish with freshly chopped parsley for added color and flavor.
