Traditional Welsh Cakes 🍪
Introduction:
Welsh cakes are a classic Welsh treat, often enjoyed for breakfast or as a snack with a cuppa. They're light, spiced, and slightly sweet, with a lovely buttery flavour and golden crust. These are quick to make and perfect for sharing!
Ingredients:
🧈 Butter: 100g, chilled and cubed
🍚 Caster sugar: 75g
🍞 Self-raising flour: 225g
🍂 Ground mixed spice: 1 tsp
🍪 Ground cinnamon: 1/2 tsp
🧀 Pinch of salt
🥚 Egg: 1, beaten
🥛 Milk: 2–3 tbsp (to bind)
🍇 Sultanas: 75g
🥄 Extra sugar: for sprinkling
Method:
🍚 Mix the dry ingredients: In a large bowl, sift together the self-raising flour, ground mixed spice, cinnamon, and salt.
🧈 Add the butter: Rub the cold cubed butter into the flour mixture until it resembles breadcrumbs. You can use your fingertips or a pastry cutter for this.
🍇 Add the sultanas: Stir in the sultanas (or raisins if you prefer), making sure they're evenly distributed through the mixture.
🥚 Bind the dough: Pour in the beaten egg and add just enough milk (2-3 tbsp) to bring the dough together. It should be firm but not too sticky.
🍪 Roll out: Turn the dough out onto a lightly floured surface and roll it out to about 5mm thickness. Use a round cutter (or a glass) to cut out the cakes.
🔥 Cook the Welsh cakes: Heat a heavy frying pan or griddle over a medium-low heat. Place the cakes on the pan and cook for 3–4 minutes on each side until golden brown and firm to the touch.
🍚 Finish with sugar: Once cooked, remove the cakes from the pan and sprinkle them with caster sugar while they're still warm.
